Clean the zucchini. Finely cut the peel lengthways on 2 sides. Cut the meat on the peeled strips lengthways 1 cm deep. Salt the zucchini vigorously and let it steep for 20 minutes. Then pat dry with kitchen paper and place in an ovenproof dish.
Mix the olive oil with the garlic, drizzle the zucchini and season well with pepper.
Bake in a hot oven at 200 ° C top / bottom heat for 20 minutes. After 10 minutes, sprinkle with 30 g of grated parmesan.
Serve hot, lukewarm or cold garnished with basil and lemon wedges.
