Instructions

  1. For the dough, put flour in a bowl. Press an indentation in the middle. Crumble the yeast in. Mix with the sugar, a little lukewarm milk and flour to make the pre-dough. Let rise in a tub for 15 minutes. Then add the rest of the milk, egg, fat and salt. Process everything into a smooth dough. Beat until the dough bubbles and separates from the bottom of the bowl. Let rise for another 25 minutes.
  2. In the meantime, peel the onion and heat the lard in a pan. Dice the bacon and peeled onion. Add to the lard and fry for 5 minutes until translucent. Take the pan off the heat and let the mixture cool down.
  3. Divide the dough into 8 equal pieces on a floured work surface and press flat. Place a teaspoon of bacon and onion mixture on top. Put the dough on top and shape into rolls.
  4. Place on a greased baking sheet at a distance of 5 cm. Let it rise for another 15 minutes. Whisk the egg yolks and milk together. Spread it on the bread roll. Slide into the preheated oven on the middle rack and bake at approx. 220 ° C for about 25 minutes
  5. Take out the bacon rolls and let them cool on a cake wire. Makes 8 pieces.
