Puree one of the two bananas. Add the chia seeds and mix with the almond milk, maple syrup and curd. Put half of this mixture in a second bowl and stir in the cocoa. Cover both bowls and let rest in the refrigerator for at least 4 hours or overnight.
Then layer both masses alternately in glasses. Slice the second banana and spread some banana slices between the layers. Use banana chips and dark chocolate as a topping.
Vegan version: Replace the quark with plant-based chocolate protein powder and the dark chocolate with cocoa nibs.
