Grind the banana chips. Mix the flour, banana chips, icing sugar, baking powder, cinnamon and pudding powder together.
Add the butter in pieces and the mashed banana to the flour mixture. Knead everything into a smooth dough. Chill the dough for approx. 60 minutes.
Roll the dough into strands in several portions, cut into small pieces and roll into croissants. Place on a baking sheet lined with baking paper and bake in a preheated oven at 180 ° C for about 10 minutes.
