Mix the eggs, flour, salt, sugar and milk into a pancake batter. Let stand for about 15 minutes to let the flour soak.
Then heat a little oil in a non-stick pan and bake 4 thin pancakes one after the other from the dough. Cover and keep warm on a plate.
Peel the bananas, cut in half with a knife, then cut each half banana once lengthways. Slowly fry the banana pieces in butter on both sides in a coated pan.
Halve each pancake once. Place a piece of fried banana on each half pancake, drizzle with a little honey and roll up.
Place 2 half-filled banana pancakes per person on dessert plates, briefly reheat in the microwave if desired. Pour any sauce over it, such as maple syrup or chocolate sauce, and serve immediately.
