Instructions

  1. Melt the butter, let it cool down a bit, preheat the oven to 200 ° C (convection 180 ° C, gas mark 3-4).
  2. Peel and roughly chop 1 banana and puree with the yoghurt. Then slowly mix in the melted butter, then the two eggs.
  3. In a second bowl, mix together the flour, baking powder, sugar, vanilla sugar, salt, cinnamon and coconut flakes (2 teaspoons as decoration).
  4. Slowly stir in the yogurt mixture - preferably with a wooden spoon - into the flour mixture, just long enough so that all the ingredients are just joined together.
  5. Peel the second banana, cut into small cubes and carefully fold into the batter.
  6. Grease a muffin tray, distribute the batter over the hollows and sprinkle the coconut flakes on top. Put the tray in the hot oven and bake the muffins for 25-30 minutes until they tear open on top. Take out of the oven and let rest in the mold for another 5 minutes. Then remove from the hollows and let cool down on a wire rack.
