- 150 g yourt
- 2 egg (s)
- 250 g flour
- 3 teaspoons baking powder
- 100 g suar
- 1 packet vanilla sugar
- 0.5 teaspoon ½ cinnamon
- 1 pinch (s) salt
- 50 g desiccated coconut

- Melt the butter, let it cool down a bit, preheat the oven to 200 ° C (convection 180 ° C, gas mark 3-4).
- Peel and roughly chop 1 banana and puree with the yoghurt. Then slowly mix in the melted butter, then the two eggs.
- In a second bowl, mix together the flour, baking powder, sugar, vanilla sugar, salt, cinnamon and coconut flakes (2 teaspoons as decoration).
- Slowly stir in the yogurt mixture - preferably with a wooden spoon - into the flour mixture, just long enough so that all the ingredients are just joined together.
- Peel the second banana, cut into small cubes and carefully fold into the batter.
- Grease a muffin tray, distribute the batter over the hollows and sprinkle the coconut flakes on top. Put the tray in the hot oven and bake the muffins for 25-30 minutes until they tear open on top. Take out of the oven and let rest in the mold for another 5 minutes. Then remove from the hollows and let cool down on a wire rack.
