While pasta cooks, cut the chicken or turkey into small pieces. Heat oil in a large saucepan over medium-high heat and fry the meat pieces for 5-6 minutes until cooked through. Season with salt and pepper. Transfer to a warm plate.
In the same saucepan, melt the margarine over medium heat. Sprinkle in the flour and stir constantly for 1 minute to create a roux. Gradually pour in the broth while whisking constantly. Add the cream and whisk until smooth. Bring to a gentle boil, then reduce heat to medium and simmer for 3-5 minutes, stirring occasionally, until slightly thickened. Add the chopped basil and cooked meat, then stir and heat through for 2 minutes. Season with salt, pepper, and paprika powder.
Cut the mozzarella into small pieces.
Divide the cooked pasta among serving plates. Spoon the basil sauce with chicken over the pasta. Top with mozzarella pieces and garnish with fresh basil leaves.
