Basil Sauce with Chicken and Mozzarella

Ingredients
- 250 g pasta your choice
- 300 g chicken or turkey meat
- some oil for frying
- 2 tablespoon margarine
- 2 tablespoon flour
- 0.5 liter ½ vegetable broth or chicken broth (your choice)
- 1 cup cream
- 1 bunch basil, finely chopped
- some basil for decoration
- salt and pepper
- 1 scoop mozzarella
- Paprika powder

- Cook the pasta al dente according to the instructions on the packet.
- In the meantime, cut the meat into small pieces and fry in hot oil in a larger saucepan. Season as needed, then remove and keep warm.
- Make a roux from flour, margarine, cream and broth. To do this, leave out the margarine in a saucepan and sprinkle in the flour. Sweat briefly. Gradually pour in the broth and the cream, stir again and again with a whisk and bring to the boil in between (do not let the sauce become too runny. If necessary, add a little salt to the sauce. Add the basil and stir. Now add the meat again and let it get hot.
- Cut the mozzarella into pieces.
- Arrange the pasta with the sauce on plates, sprinkle some cold mozzarella on top and serve decorated with a few whole basil leaves.
- Tip: You can leave out the meat for the vegetarian option.
- Not necessarily low in calories, but it`s worth it! I cannot guarantee the quantities, either, I always do it according to my feelings.
