Mix the butter, sugar and vanilla sugar together. Add extra eggs, stir in each egg in 2 minutes. Mix the flour, starch, almonds and baking powder, stir in with coffee. Place 4-5 tablespoons of dough on a baking tray (20 x 30 cm) and bake until brown under the grill (approx. 3 minutes). Keep doing this until you run out of batter. Let the cake cool down, cut the edges cleanly. Brush the dough with the mixed jam.
Roll out the marzipan between 2 rectangular freezer bags (20 x 30). Put the marzipan blanket on top of the jam. Melt 2/3 of the couverture in a water bath, slice the rest.
Cut the Baumkuchen plate into cubes (3 x 3) and coat one after another with the couverture. Then sprinkle with shaved chocolate.
