Ingredients

  • 250 g butter, soft
  • 220 g suar
  • 2 packs vanilla sugar
  • 6 egg (s)
  • 200 g flour
  • 100 g cornstarch
  • 50 g almond (s), round
  • 2 teaspoons baking soda
  • 100 ml coffee, extra strong
  • 150 g jam (blackberry jam), red
  • 300 g marzipan raw mixture
  • 300 g couverture, semi-sweet

Instructions

  1. Mix the butter, sugar and vanilla sugar together. Add extra eggs, stir in each egg in 2 minutes. Mix the flour, starch, almonds and baking powder, stir in with coffee. Place 4-5 tablespoons of dough on a baking tray (20 x 30 cm) and bake until brown under the grill (approx. 3 minutes). Keep doing this until you run out of batter. Let the cake cool down, cut the edges cleanly. Brush the dough with the mixed jam.
  2. Roll out the marzipan between 2 rectangular freezer bags (20 x 30). Put the marzipan blanket on top of the jam. Melt 2/3 of the couverture in a water bath, slice the rest.
  3. Cut the Baumkuchen plate into cubes (3 x 3) and coat one after another with the couverture. Then sprinkle with shaved chocolate.
