Ingredients

  • 250 g butter or mararine
  • 250 grams sugar
  • 1 packet vanilla sugar
  • 6 egg (s), separated
  • 150 grams flour
  • 100 g cornstarch
  • 3 teaspoons baking powder
  • 100 g marzipan
  • Bitter almond flavor
  • 3 tablespoon amaretto
  • Whole milk couverture

Instructions

  1. Mix butter, sugar, egg yolk, vanilla sugar and bitter almond flavor very frothy. Warm up the marzipan with 3 tablespoons of amaretto and stir, add to the batter and stir in well. Add the flour, cornstarch and baking powder, tablespoon at a time. Beat the egg whites very stiff and then fold in.
  2. Set the oven to the first grill setting. Line the bottom of a springform pan with baking paper and spread about 3 tablespoons of batter on top. Grill in the preheated oven on the bottom rack for about 3 minutes until golden brown. Then spread about 3 tablespoons of batter on it again and grill again for about 3 minutes. Proceed in the same way with the rest of the dough. Always keep an eye on the cake so that it is not suddenly too dark.
  3. Remove the cooled cake from the edge of the mold and cover with whole milk couverture.
