- Blanch the beans in boiling salted water for about 8 minutes. Then chill and drain. Peel and finely dice shallots and garlic. Chop the parsley.
- Mix the vinegar with a little salt and pepper. Fold in olive oil and try, use more oil if necessary. Add shallots, garlic and parsley and stir in.
- Cut olives into wedges. Drain the tomatoes. Then quarter and cut into small cubes. Crumble or dice the feta cheese.
- To eat, put everything in a bowl and stir together or arrange on a plate.
