Instructions

  1. Halve the red onion, cut the halves four times and cut into thin slices. Put in a bowl and mix well with the sugar and a little salt until it draws in a little water and thus loses its sharpness.
  2. Add the herbs, herb vinegar and plenty of olive oil. Dice the feta. Drain the beans and add them with the olives. Mix everything and let it steep.
  3. If you like, you can also add garlic, chilli and dried, oiled, chopped tomatoes.
