- Blanch the prepared beans in salted water for about 5 minutes and drain.
- Rub, wash and quarter the quince, cut out the core and cut into approx. 1 cm cubes.
- Mix with lemon juice so that the quince does not turn brown.
- Cut the peeled onions into small pieces.
- Fry the onions and quince in the olive oil for about 5 minutes.
- Add the beans and savory and fry for another 2 minutes. Season to taste with salt and pepper.
- Serve as a side dish e.g. with venison saltimbocca (recipe also in my profile).
