Drain the pineapple chunks and refrigerate them. Reserve the juice. In a small bowl, mix the soy sauce, brown sugar, vegetable oil, ground ginger, chopped garlic, ground black pepper, and reserved pineapple juice until well combined. Transfer 1/3 cup of this marinade to a covered container and refrigerate.
Pour the remaining marinade into a large plastic bag. Add the beef pieces. Seal the bag and shake well to coat the meat. Refrigerate for 8 hours.
Preheat the grill to medium heat. Remove the beef from the bag, reserving the remaining marinade. Thread the beef pieces onto metal skewers, alternating with pineapple chunks. Place the skewers on the grill and cook for about 5 minutes on each side, without covering the grill, brushing every 1-2 minutes with the remaining marinade.
Serve the kebabs with the reserved refrigerated marinade on the side.
