Salt and pepper the meat. Fry in the oil in a roasting pan on all sides, then remove. Roast the onions, tomatoes, garlic and thyme in the same roaster while stirring, then add the wine and stock.
Put the meat back in the roaster, add the tomato paste and bay leaves and cover and let simmer on the lowest setting for at least 3, better 4 hours. Serve with ribbon noodles.
