Fry the bacon in a large pot over medium-high heat for about 5-7 minutes until crispy. Remove and set aside.
Fry the onions in the same pot with the bacon fat over medium-high heat for about 8-10 minutes until lightly browned. Remove and set aside.
Fry the beef in small portions in the pot over medium-high heat for about 3-4 minutes per batch until browned on all sides. Return all beef to the pot.
Add the juniper berries, bay leaves, and red wine to the pot.
Bring to a simmer and simmer over medium heat for 1.5 hours.
Add the fried onions and plenty of finely chopped parsley.
Cook for another 1 to 1.5 hours on the lowest heat.
