Instructions

  1. Cut the onions into eighths.
  2. Cut the beef into 2 cm cubes.
  3. Chop the bacon.
  4. Fry the bacon in a large pot over medium-high heat for about 5-7 minutes until crispy. Remove and set aside.
  5. Fry the onions in the same pot with the bacon fat over medium-high heat for about 8-10 minutes until lightly browned. Remove and set aside.
  6. Fry the beef in small portions in the pot over medium-high heat for about 3-4 minutes per batch until browned on all sides. Return all beef to the pot.
  7. Add the juniper berries, bay leaves, and red wine to the pot.
  8. Bring to a simmer and simmer over medium heat for 1.5 hours.
  9. Add the fried onions and plenty of finely chopped parsley.
  10. Cook for another 1 to 1.5 hours on the lowest heat.
  11. Season with salt and pepper to taste and serve.
