Beef Roll Instructions

  1. Cut the onions into half rings.
  2. Heat vegetable oil in a pan over medium heat. Fry the onions for about 5 minutes until soft and just beginning to turn golden.
  3. Add the chopped mushrooms to the fried onions.
  4. Fry together for 3-4 minutes until the mushrooms release their moisture. Transfer to a plate and let cool.
  5. Prepare minced meat from the beef, or use store-bought ground beef.
  6. In a bowl, combine the minced meat with 1 egg, salt, and spices to taste. Stir well.
  7. Add roughly 0.5 cups of ice water and stir again to create a juicy texture.
  8. Lay cling film flat on the table. Place the minced meat mixture on it and spread with your hands into a rectangular layer.
  9. Arrange the cooled mushroom and onion mixture in a line down the center of the meat layer.
  10. Using the cling film as a guide, lift one edge and roll the meat into a tight roll.
  11. Pinch the seams to seal and place the roll seam-side up.
  12. Fold a sheet of foil in half. Place baking parchment on top of the foil to prevent sticking.
  13. Using the cling film, lift the roll and transfer it to the parchment with the seam facing down.
  14. Wrap the foil around the roll to create a sealed packet. Drizzle 1-2 tablespoons of vegetable oil over the top.
  15. Preheat the oven to 180 °C (350 °F). Bake for 40 minutes to 1 hour until the internal temperature reaches 63 °C (145 °F).
  16. Remove from the oven and let cool slightly before serving. Serve with fresh greens.
