Instructions
- Dice the onion, bell pepper, zucchini, carrot, and garlic. Slice the sausages.
- Heat a small amount of oil in a pan over medium-high heat (if using a non-stick pan, you can skip the oil).
- Fry the diced onion for 2 minutes until softened.
- Add the garlic and fry for 1 minute until fragrant.
- Add the sausage slices and cook for 2-3 minutes.
- Add the diced bell pepper, zucchini, and carrot, and stir.
- Add 1/2 cup of water, bring to a boil, then simmer for 4-5 minutes until the vegetables are tender but still have some bite.
- Stir in 1 tablespoon of ketchup.
- Season with salt and pepper to taste.
