Heat roughly 2-3 tablespoons of oil in a pan over medium-high heat. Add the red onion strips and sauté for 3-4 minutes until they soften.
Sprinkle some flour over the onions and stir well to coat them evenly.
Pour half of the beer into the pan and let it simmer for 3-4 minutes, stirring occasionally.
Season with caraway seeds, chopped thyme, salt, and pepper to taste.
Add the remaining beer and let it simmer for another 3-5 minutes until the sauce thickens.
Meanwhile, in a separate pan, heat roughly 2-3 tablespoons of oil over medium-high heat. Add the steaks and fry for 3-4 minutes per side until the internal temperature reaches 63 °C / 145 °F.
Place each steak on a serving plate and spoon the onion beer sauce over the top.
Serve with French fries, croquettes, or hash browns.
