Instructions

  1. Heat clarified butter in a pan, sear the meat, dust with flour, season and remove from the pan.
  2. Add butter, sauté the garlic and rosemary. Add balsamic vinegar, cream and stock, bring to the boil and simmer for about 10 minutes.
  3. Add the meat again, including any leaked liquid, and season with salt and pepper.
  4. I also have polenta and steamed or caramelized carrots.
