- Heat clarified butter in a pan, sear the meat, dust with flour, season and remove from the pan.
- Add butter, sauté the garlic and rosemary. Add balsamic vinegar, cream and stock, bring to the boil and simmer for about 10 minutes.
- Add the meat again, including any leaked liquid, and season with salt and pepper.
- I also have polenta and steamed or caramelized carrots.
