Rinse the beef liver and remove the films and large bile ducts. Cut the liver into small, elongated pieces. Peel, wash, and finely chop the onions. Heat 1 tbsp butter in a frying pan over medium heat. Add the onions and fry for 2-3 minutes, stirring occasionally. In another frying pan, heat the remaining 1 tbsp butter over medium heat. Add the liver, salt, and a pinch of ground black pepper. Fry the liver over medium heat for 7-10 minutes, stirring occasionally. Add the cooked onions to the liver pan. Sprinkle the flour over the mixture and stir to combine. Fry for 5 minutes over medium heat, stirring occasionally. Add the sour cream and mix well. Cover the pan with a lid and simmer over low heat for 10 minutes. Serve with your favorite side dish.
