Instructions

  1. Mix the egg yolks with the sugar until foamy, mix with the cream, orange peel and sugar and continue to stir in a water bath until it thickens.
  2. Finely puree the beetroot, mix with the orange juice and concentrated cream. Pass the whole thing through a sieve and mix with the chopped chocolate.
  3. Freeze for 5 hours, stir every hour with a hand blender.
