Instructions

  1. Peel the potatoes and cut into cubes. Place in a microwave-safe bowl and cover with a dash of water and cook for 7 minutes at 800 watts.
  2. First cut the beetroot into slices, then into small cubes (wear disposable gloves).
  3. Take the potatoes out of the microwave, add the butter, stock and spices and work everything through well with a masher. Add the beetroot cubes and carefully pound. Season again to taste.
  4. Put the beetroot puree in any dish - possibly lightly greased beforehand - and arrange on a plate.
  5. I had meat loaf with it, but it also tastes good with other meat dishes.
