Instructions

  1. Sauté the spring onions and ginger, add the beetroot and sauté. Add the apples, possibly peeled. Deglaze with coconut milk and vegetable stock and simmer for 20 minutes.
  2. Add about 300 ml of tahini. Puree the soup and add water or soy milk, depending on the consistency. Add orange juice and cinnamon and season with salt and pepper.
