Clean and chop the vegetables. Heat the oil in a pan, fry the onion in it until translucent. Add the carrot and fry a little, after a few minutes then add the paprika and fry for about 4-6 minutes. Dice the feta and mix in the vegetables, fry for another 2-3 minutes. Chop the parsley into small pieces, sprinkle the fried vegetables with it, season with herbs from Provence and salt.
