Cook the pasta in salted water according to the instructions on the packet. Finely dice the onion and garlic and carefully sweat in olive oil at a low temperature, season with a little salt and sugar.
Cut the peppers and spring onions into fine strips, add to the onions and fry over a medium temperature. Season with salt, sugar and plenty of pepper and oregano.
Then add the ricotta, mix with the vegetables and after about two minutes add the cooked pasta. Let it get really warm again and serve.
