- Make a yeast dough from the baking ingredients and let it rise cold.
- Approx. 1/2 cm. Roll out thick, cut out circles with a (mustard) glass and put approx. 1 teaspoon of jam in the middle.
- Brush the edge of a 2nd circle of dough with egg white and press firmly onto the jam circle.
- Let the Berliners rise well in a warm place.
- Heat the fat in the deep fryer (stick test) and put the donuts in reverse as they were before and let them bake brown on both sides.
- Drain on a sieve and immediately sprinkle with powdered sugar.
