- Sprinkle the berries with sugar. Mix it loosely, thaw it and let it steep.
- Whip the cream until stiff. Mix the sour cream or crème fraîche, lemon zest and juice with vanilla sugar. Fold in the cream.
- Pour the cream into 4 glass bowls and spread the berries over them. Garnish with lemon balm.
