Mix dry ingredients in a bowl. Mix water with soy flour. Mix the dry ingredients with the water-soy flour mixture and oil to a smooth dough. Grease the springform pan a little, fill in the dough and bake for about 15 - 25 minutes (depending on the browning preference and oven), for me it took about 15 minutes at 180 degrees.
The base can now be used e.g. for fruit cakes. I then cook a vegan custard that I spread on the floor. After cooling off, I cover the pudding layer with fruit, pour a cake icing over it and put it in the cold for 1 - 2 hours.
For me, coconut blossom sugar has really proven itself in the vegan bakery kitchen. I don`t want to use any other sugar at all.
