Ingredients

  • 230 g flour
  • 170 g coconut blossom suar
  • 1 teaspoon vanilla powder
  • 1 packet baking powder
  • 8 tablespoon vegetable oil, e.g., sunflower oil
  • 250 ml water
  • 2 tablespoon soy flour

Instructions

  1. Pre heat the oven to 180 degrees celcius
  2. Mix dry ingredients in a bowl. Mix water with soy flour. Mix the dry ingredients with the water-soy flour mixture and oil to a smooth dough. Grease the springform pan a little, fill in the dough and bake for about 15 - 25 minutes (depending on the browning preference and oven), for me it took about 15 minutes at 180 degrees.
  3. The base can now be used e.g. for fruit cakes. I then cook a vegan custard that I spread on the floor. After cooling off, I cover the pudding layer with fruit, pour a cake icing over it and put it in the cold for 1 - 2 hours.
  4. For me, coconut blossom sugar has really proven itself in the vegan bakery kitchen. I don`t want to use any other sugar at all.
