Now add the tomatoes, the quartered onions, the green and red chillies, ginger, coriander and sugar. Let everything cook again for 2-3 minutes over high heat. The potatoes and tomatoes should be done, but not too soft.
Now sprinkle the Garam Masala over it, stir gently and serve hot.
