Cut the Kasseler (smoked pork) into small cubes. In a skillet, fry the bacon cubes over medium heat for 6-7 minutes until browned and crispy. Transfer bacon to a large bowl.
Add the Gorgonzola (crumbled), round beef, egg, condensed milk, liquid smoke, and Kasseler cubes to the bowl with the bacon. Mix gently until just combined. Refrigerate for 15-20 minutes.
Divide the chilled mixture into 8 portions of approximately 180-190 g each. Shape into patties using a patty press or your hands.
Season each patty with Burger Dry Rub to taste.
Cook the patties on a grill or skillet over medium-high heat for 2-3 minutes per side until the internal temperature reaches 71°C (160°F).
