- Wash the currants and remove the stalks. Put in a saucepan and squeeze or puree. Mash the bananas until they are pulpy and add to the currants.
- Weigh and add the gelling sugar according to the weight of the fruit. Bring the fruit pulp to a boil and simmer for about 4 minutes.
- Pour hot into screw-top jars and close immediately. Let cool down.
