Soak the toast slice in roughly 1/4 cup milk for 5 minutes. Crumble the soaked toast and mix with the minced beef and about 1 tablespoon curry powder.
Heat roughly 2-3 tablespoons butter in a pan over medium-high heat. Fry the chopped onion, garlic, grated ginger, and African style spice mix for about 5-7 minutes until golden brown.
Add the beef mixture to the pan and cook over medium-high heat for about 8-10 minutes, stirring often, until the beef is browned.
Remove from heat. Mix in the sultanas, 1 egg, lemon juice, salt, roughly 1/4 cup milk, almonds, and chutney. Stir well to combine.
Transfer the mixture to a baking dish. In a small bowl, beat the remaining egg with roughly 1/4 cup milk and pour over the meat mixture.
Press some bay leaves vertically into the bobotie. Sprinkle with the remaining curry powder (about 1 tablespoon).
Bake in a preheated oven at 180 °C (356 °F) for about 30 minutes until the top is set and golden.
