Instructions

  1. In a bowl, mix together the melted butter, 1 pinch of salt, 4 tablespoons sugar, 3 eggs, and 500g quark until well combined.
  2. Fold in the 50g flour and 25g breadcrumbs until the mixture is uniform.
  3. Bring lightly salted water to a boil in a large saucepan over high heat.
  4. Reduce heat to medium so the water simmers gently (not a rolling boil).
  5. Wet two spoons with water, then use them to form the quark mixture into oval lobes and gently drop each into the simmering water.
  6. Simmer for 10 minutes until the dumplings cook through.
  7. Remove the cooked dumplings with a slotted spoon and transfer to a serving dish.
  8. In a pan, melt the 100g butter over medium heat.
  9. Gently toss the warm dumplings in the melted butter to coat evenly.
  10. Sprinkle with cinnamon and sugar.
  11. Serve immediately, optionally with cherry or plum compote. For dessert portions, halve all recipe quantities.
