Mix 4 tablespoons of slightly warmed milk with yeast, sugar and 4 tablespoons of flour and let rise.
Put the remaining flour with the eggs, semolina, the remaining milk and salt in a bowl. Add the pre-dough and knead everything into a smooth, shiny dough. Let rise in a warm place for 20-30 minutes.
Cut the rolls into fine cubes, toast them in a pan and knead them into the dough. Roll out the dough in the shape of a roller, let it rise again slightly and pour over boiling water in a cloth stretched over the pan. Close with a lid and remove after approx. 30 minutes.
Cut the dumplings into slices with kitchen twine. Brown the butter in a pan and pour over the dumpling slices.
