Finely chop the onions. Cut the pork ham, pork neck, and smoked sausages into bite-sized pieces.
Melt the lard in a large saucepan over medium heat. Add the onions and fry for 5-7 minutes until golden brown.
Add the pork ham pieces and fry for 3-4 minutes until browned. Add the pork neck and fry for 2-3 minutes. Add the sausage pieces and minced garlic, and fry for another 2-3 minutes.
Add the thyme, paprika, and ground pepper. Pour in the red wine and simmer covered over low heat for 10-15 minutes.
Pour in roughly 250 ml water, add roughly 1-1.5 teaspoons salt, cover, and simmer for 50-55 minutes until the meat is very tender. Taste and adjust salt as needed.
Serve with your favorite side dish and vegetable salad.
