Clean the red and yellow peppers, remove the seeds and membranes, then cut into bite-sized pieces.
Wash the tomatoes, remove the cores, then quarter or cut into eighths depending on size.
Peel the shallots and garlic clove. Finely dice the shallots and mince the garlic.
Heat the vegetable oil in a wide pan over medium heat. Add the diced shallots and sauté for roughly 2-3 minutes until softened. Add the minced garlic and cook for 1 minute.
Add the tomatoes, peppers, marjoram, and bay leaves to the pan. Stir to combine.
Transfer the vegetable mixture to an ovenproof dish. Place the sausages on top. Drizzle the sausages with a little oil and season with salt and pepper.
Bake in the preheated oven for 50 minutes, stirring the vegetable mixture and turning the sausages every 10-15 minutes.
Serve with French fries or freshly baked white bread, accompanied by a green salad and a cold beer.
