Beat the eggs, place in a deep plate and whisk, put the breadcrumbs in a second plate.
Now place a slice of boiled ham on each board, a slice of Gouda cheese and 4 stalks of asparagus on top. First wrap the cheese around the asparagus, then the ham. Secure with toothpicks (don`t forget to remove them afterwards!).
Turn the parcels first in the egg, then in the breadcrumbs and then fry them in hot oil until golden brown.
Meanwhile, heat the hollandaise sauce. Drain the cooked potatoes, distribute them on the plates, place the asparagus parcels next to them and serve with the sauce.
A fresh, crunchy, mixed salad tastes good with it.
