Instructions

  1. Wash the eggplant and cut into slices. Mix the soy flour with a little water and, if necessary, some soy milk or soy cuisine. The consistency should be neither too thin nor too creamy. You may also need more soy flour.
  2. Mix the flour with salt, pepper and, if you like, other spices on a plate, also sprinkle the breadcrumbs on a plate. First bathe the eggplant slices in the flour, then pull them through the soy flour-water mixture so that both sides are well covered. Then roll in breadcrumbs and fry in a hot pan with oil until crispy.
  3. If you don`t like it too greasy, you can put the aubergine slices on a plate with a paper towel and carefully dab them off.
