Instructions

  1. Cut the margarine into small pieces, briefly heat them up in the microwave if necessary. The margarine should be soft but not melted. Put the flour and salt in a bowl. Add the thawed margarine and knead with the flour to form a firm dough. If it is too firm to add a little water, if it is too soft, knead in a little more flour. Shape the dough into a ball and wrap it in cling film and let it rest in the refrigerator for 30 minutes.
  2. Preheat the oven to 180 ° C fan oven.
  3. In the meantime, clean and chop the broccoli. Cut the stem into small slices and pluck the florets as small as possible. Then blanch the broccoli in boiling salted water for two to three minutes.
  4. Heat some olive oil in a pan. Fry the chopped onion briefly in it, then add the minced meat and fry until it becomes crumbly. Add the broccoli and fry everything briefly (!). Season with salt and pepper, then remove from the heat.
  5. Take the dough out of the fridge and roll it out thinly using a rolling pin. Line the bottom of a springform pan with a diameter of 16 cm, greased with a little oil, with the dough and pull up an edge about 3 cm high.
  6. Place the broccoli and minced meat mixture on the dough and distribute it evenly.
  7. Separate an egg. Add the egg white to the second egg and milk and whisk. Use the egg yolk for other purposes. Crumble half of the goat cheese into the egg-milk mixture. Season to taste with salt and pepper, then pour evenly over the quiche.
  8. Crumble the remaining goat cheese over the quiche. If you like, you can also add a small handful of pine nuts over the quiche, the taste harmonizes very well with that of the broccoli. Bake in the oven for about 30 minutes, until the egg has set and the edge of the pastry is crispy brown.
  9. Serve with a leaf salad.
  10. Info: this quiche is designed for two people or eight pieces. One piece has about 125 kcal, i.e. a serving of four pieces (half the quiche) about. 500 kcal.
  11. If you want to prepare the quiche for a normal springform pan with a diameter of 26 or 28 cm, simply triple all the measurements. The baking time may then have to be extended by a few minutes.
