Clean the broccoli in florets, blanch in salted water for about 3 minutes and rinse in cold water.
Cut the seitan into large cubes. Peel and finely chop the garlic.
Wash and clean tomatoes and spring onions. Remove the tomatoes from the stalk and cut in half. Cut the spring onions into wide rings.
Heat oil in a large pan. Fry the seitan in it for about 4 minutes over medium heat. Add tomatoes, garlic and spring onions and fry for another 2 minutes.
Season everything with salt, pepper, curry and soy sauce and season to taste.
Fluff the rice and add it together with the cranberries. Mix everything well and fry briefly and let heat.
Serve everything.
Tip:
If you like it a little more piquant, you can serve it with sambal oelek.
