Finely chop the broccoli with a knife or a food processor, but do not puree. Finely dice the onion and place in a bowl with the chopped broccoli. Add eggs, cheddar, breadcrumbs, garlic powder and the remaining herbs and mix well. Season with salt and pepper. Preheat the oven to 200 ° C.
Roll about 1 tablespoon of the mixture into croquettes with wet hands and distribute evenly on a baking sheet lined with baking paper. It helps to wash your hands every now and then to prevent the mass from sticking to your hands. Bake for about 25 minutes. Turn halfway through. When the croquettes are golden brown on both sides, remove from the oven and serve.
It goes well with everything you would eat with normal croquettes.
