Divide the broccoli into small florets and briefly blanch them in salted boiling water. Drain and quench. Cut the ham into small cubes.
Roll up the puff pastry and top with broccoli, ham and grated cheese, pepper and roll up into a strudel. Brush with the beaten egg and bake in the oven at 180 degrees for 15-20 minutes until golden brown.
Mix the sour cream and yoghurt together. Season with salt, pepper and finely chopped fresh herbs.
