Mix the yeast with the sugar. Then mix with the warmed milk and a few spoons of flour and let the resulting mass rise a little.
Put the rest of the flour in a second bowl, add the salt and make a well in the middle. Put the yeast-sugar-milk-flour mixture in there. Mix in the beaten egg, the liquefied, warm butter and the water and knead everything for approx. 5 minutes so that it results in a loose dough. If the dough is still too loose, add a little extra flour.
Shape a ball, place on a cloth and cover with another cloth. Let the ball of dough rise until it has doubled in size.
Knead the dough ball again, then form a roll.
Place the ready-formed rolls on baking paper or a greased baking sheet with some space between them and spread a thin layer of fat on the top. Let the rolls rise for about 30 minutes on the tray.
Then brush the surface with the egg.
Variation: Sprinkle with poppy seeds, sesame seeds and grated cheese as desired. Spicy paprika goes very well with grated cheese.
Bake in the oven at 200 ° C until the rolls have turned a golden-brownish color.
