- Preheat the oven to 180 degrees (top / bottom heat).
- Finely dice about 5 large strawberries and mix with the ricotta, egg and sugar.
- Put everything in buttered and sugared molds. Cook in a water bath in a hot oven for about 20 minutes.
- Let cool down and chill well in the refrigerator.
- Preparation of the sauce:
- Bring the rest of the strawberries to the boil with a little water, the juice and the zest of the lemon and then puree.
- Serve the budini on a sauce mirror.
