Today we are preparing with you an exotic meal of Mexican cuisine. A burrito is a wheat tortilla wrapped in minced meat, beans, and sometimes cheese. The flatbread, by the way, is called the beautiful word “tortilla” or in the Spanish style “Tortillas”.
In a bowl, combine flour, salt, and baking soda. Add softened butter and water, then knead for 8-10 minutes until the dough is elastic. Cover and let rest for 30 minutes. Divide into 10 equal parts and roll each very thin. Heat 3 tbsp of vegetable oil in a pan over medium-high heat. Fry each tortilla for 1-2 minutes per side until golden. Transfer to a plate.
Preheat oven to 180°C (350°F). Season pork with salt and place in a baking dish. Bake for 45-60 minutes until the internal temperature reaches 63°C (145°F), then cut into small pieces.
In a saucepan, combine broth, tomato paste, orange zest, and ground red pepper. Cook over medium heat for 5-10 minutes until slightly thickened. Add the pork pieces and cook for 5 more minutes.
Preheat oven to 180°C (350°F). Place each tortilla on a work surface, add some filling in the center, fold the edges up to form an envelope shape, and place seam-side down on a baking sheet. Warm in the oven for 10-15 minutes until heated through.
