- Mix the flour with baking powder and baking soda in a bowl and set aside.
- In a bowl, whip the softened butter with sugar, a pinch of salt and vanilla sugar until lightly creamy.
- Add the eggs one at a time and keep beating.
- Add the buttermilk together with the milk OR water kefir and continue to beat briefly.
- Pour the flour mixture over it. Mix everything well until the whole thing has blended well and there are no more lumps.
- The dough should not be too thick or too runny at the end, the consistency of the batter.
- Let the dough rest briefly so that the flour can thicken.
- Brush the heated waffle iron with a little oil and pour in some batter.
- After about 2 minutes of baking time (depends on the device, so please be careful and check if necessary) carefully remove the waffles.
- Gradually bake the dough.
- If you want to have the waffles crispy, do NOT stack them on top of each other but let them cool down on a baking rack.
- If you don`t like it so sweet, you can use less sugar.
- The amount was enough for me for 20 thin and crispy waffles.
